Ingredients

  • 2 skin-on salmon fillets (6 oz / 170 g each)
  • 1/3 cup (40 g) walnuts, finely chopped
  • 1 tsp Dijon mustard
  • 1/2 cup (85 g) dry quinoa, rinsed
  • 1 large bunch curly kale (about 5 oz / 140 g), stemmed and torn
  • 2 cloves garlic, thinly sliced
  • 2 tbsp extra-virgin olive oil, divided
  • 1 lemon (zest and juice)
  • 1/4 tsp salt and black pepper to taste

Method

  1. Cook the quinoa: simmer with 1 cup water, covered, 15 minutes until liquid is absorbed, then fluff and stir in lemon zest.
  2. Heat oven to 400 F (205 C). Pat salmon dry, brush tops with Dijon, and press the chopped walnuts on to form a crust.
  3. Set salmon skin-side down on a lined sheet, drizzle with 1 tsp olive oil, and roast 12 to 14 minutes until the center flakes and walnuts are toasted.
  4. While salmon roasts, warm 1 tbsp olive oil in a skillet over medium heat and soften the sliced garlic 30 seconds.
  5. Add kale with a splash of water, saute 4 to 5 minutes until tender, then season with salt, pepper, and a squeeze of lemon.
  6. Plate the quinoa, top with the kale and walnut-crusted salmon, and finish with remaining olive oil and lemon juice.
