Golden Tomato and Ginger Red Lentil Dahl over Brown Rice
Silky red lentils simmered soft in a turmeric-gold tomato, onion and ginger base, wilted with spinach and brightened with lemon, spooned over nutty brown rice.
Why it works

Ingredients
- 3/4 cup (150 g) dried split red lentils, rinsed
- 3/4 cup (140 g) brown rice
- 1 small onion (about 120 g), finely diced
- 3 cloves garlic, minced
- 1 tbsp freshly grated ginger
- 1 1/2 tsp ground turmeric
- 1 tsp ground cumin
- 1 1/2 cups (360 g) chopped ripe tomatoes or crushed canned tomatoes
- 3 cups (90 g) fresh spinach
- 1 tbsp extra-virgin olive oil
- 1/2 lemon, juiced, plus wedges to serve
Method
- Cook the brown rice in plenty of water until tender, about 25 minutes, then drain; start the dahl while it simmers.
- Warm the olive oil in a saucepan over medium heat and soften the onion for 4 to 5 minutes, then stir in the garlic, ginger, turmeric and cumin and cook for 1 minute until fragrant.
- Add the tomatoes and cook for 3 to 4 minutes to break down, then stir in the rinsed lentils and 2 1/2 cups (600 ml) water, bring to a simmer, and cook gently for 15 to 18 minutes until the lentils are very soft, stirring occasionally.
- Fold in the spinach and let it wilt for 1 to 2 minutes, then stir in the lemon juice and season with salt to taste.
- Spoon the dahl over the brown rice and serve with lemon wedges.
