Ingredients

  • 2 x 15 oz cans cannellini beans, drained and rinsed
  • 1 bunch curly kale (about 200 g), stemmed and torn
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 x 14 oz can diced tomatoes
  • 80 g dry farro
  • 2 tbsp olive oil
  • 1.2 liters (5 cups) low-sodium vegetable broth
  • 1 tsp dried oregano
  • 1 bay leaf
  • 24 g grated Parmesan, for serving
  • Salt, black pepper, and a pinch of chili flakes

Method

  1. Warm the olive oil in a large pot over medium heat and sweat the onion, carrot, and celery with a pinch of salt until softened, about 8 minutes, then add the garlic, oregano, and chili flakes and cook 1 minute.
  2. Stir in the diced tomatoes and cook 3 minutes until slightly jammy.
  3. Add the farro, bay leaf, and broth; bring to a boil then reduce to a simmer and cook 20 minutes until the farro is nearly tender.
  4. Add the cannellini beans and simmer 5 minutes; for a creamier body, mash a ladleful of beans against the pot and stir back in.
  5. Fold in the kale and cook 4 to 5 minutes until wilted and silky; season with salt and plenty of black pepper and remove the bay leaf.
  6. Ladle into bowls and finish each with a light shower of Parmesan and a drizzle of olive oil if desired.
