  • 2 tbsp gluten-free white or yellow miso paste

  • 1 cup (185 g) brown rice, cooked (about 2 cups cooked)
  • 4 cups (120 g) baby spinach or bok choy
  • 1 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced

Method

  1. Heat the oven to 220 C / 425 F. Score the cut faces of the eggplant halves in a crosshatch, brush lightly with a little of the sesame oil, and roast cut-side up for 18 to 20 minutes until soft and golden.
  2. Whisk the miso, maple syrup, rice vinegar, and remaining sesame oil into a smooth glaze, loosening with a teaspoon of water if needed.
  3. Brush the roasted eggplant generously with the glaze and return to the oven for 4 to 5 minutes until lacquered and bubbling at the edges.
  4. Meanwhile, steam or wilt the greens for 2 to 3 minutes and warm the cooked brown rice.
  5. Divide the rice between two plates, top with the glazed eggplant and the greens, and finish with toasted sesame seeds and sliced scallions.
