Ginger-Miso Mackerel with Soba, Edamame and Sesame Spinach

Ingredients
- 4 mackerel fillets (about 4 oz / 115 g each; or use 4 small trout fillets)
- 8 oz (225 g) dry buckwheat soba noodles
- 3 tbsp white or yellow miso paste (unpasteurized if available)
- 1 tbsp fresh ginger, finely grated
- 2 cloves garlic, grated
- 4 cups low-sodium vegetable or dashi broth
- 1 1/2 cups shelled edamame (fresh or frozen)
- 6 packed cups baby spinach
- 1 tbsp toasted sesame oil
- 1 tbsp toasted sesame seeds
- 2 tbsp low-sodium soy sauce or tamari, divided
- 1 tsp rice vinegar
- 1 Persian cucumber, thinly sliced
- 3 scallions, thinly sliced
- 1 tsp neutral oil for broiling
Method
- Quick-pickle the cucumber: toss sliced cucumber with rice vinegar and a pinch of salt and set aside to macerate while you cook.
- Broil the mackerel: pat fillets dry, brush with neutral oil and 1 tbsp of the soy sauce, and broil skin-side up 6-8 minutes until the skin blisters and the flesh flakes.
- Cook the soba: boil the noodles per package directions (usually 4-5 minutes), then drain and rinse briefly under cool water to stop cooking and keep them springy.
- Build the broth: heat the broth to a gentle simmer with the grated ginger and garlic, add the edamame and cook 3 minutes; turn the heat to low and whisk in the miso off a rolling boil so the live cultures aren't destroyed.
- Sesame spinach: in a separate pan over medium heat, warm the sesame oil, add spinach with the remaining 1 tbsp soy sauce, and toss just until wilted, about 1 minute; sprinkle with sesame seeds.
- Divide soba among four bowls, ladle over the ginger-miso broth and edamame, top each with a mackerel fillet, sesame spinach, pickled cucumber and scallions, and serve warm.
