Ingredients

  • 2 salmon fillets (about 140 g / 5 oz each), skin on
  • 1/2 cup (90 g) dry quinoa
  • 2 cups (60 g) curly kale, stemmed and thinly sliced
  • 1 ripe avocado, sliced
  • 1/2 red grapefruit, segmented
  • 1 orange, segmented
  • 1 small red bell pepper, thinly sliced
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 lemon, juiced (about 2 tablespoons)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Method

  1. Heat the oven to 400 F (200 C). Pat the salmon dry, rub with 1 tablespoon olive oil, and season with 1/4 teaspoon salt and the black pepper. Roast skin-side down on a lined tray for 12 to 15 minutes, until just opaque at the center.
  2. Meanwhile, rinse the quinoa and simmer in 1 cup water with a pinch of salt for about 15 minutes, until the water is absorbed; fluff and let cool slightly.
  3. Put the sliced kale in a bowl with 1 tablespoon olive oil and a pinch of salt, then massage with your hands for about a minute until it softens and darkens.
  4. Whisk the remaining 1 tablespoon olive oil with the lemon juice and remaining 1/4 teaspoon salt to make the dressing.
  5. Divide the quinoa and kale between two bowls. Flake the roasted salmon over the top and arrange the avocado, grapefruit, orange, and bell pepper alongside.
  6. Spoon the lemon dressing over each bowl and serve.
