Lemon-Garlic Baked Tempeh Power Bowl with Broccoli and Brown Rice

Ingredients
- 200 g tempeh, cut into 1 cm slabs
- 3 tbsp (45 ml) fresh lemon juice, plus zest of 1 lemon
- 3 cloves garlic, finely grated
- 1 tbsp (15 ml) extra-virgin olive oil
- 1 tsp smoked paprika
- 1 tbsp (15 ml) pure maple syrup
- 260 g cooked brown rice (about 1 1/3 cups)
- 300 g broccoli florets (about 1 large head)
- 2 tbsp (20 g) pumpkin seeds
Method
- Heat the oven to 200 C / 400 F and line a small baking tray. Whisk 2 tbsp of the lemon juice with the garlic, olive oil, smoked paprika, maple syrup, and a pinch of salt.
- Add the tempeh slabs, turn to coat, and let them marinate 10 minutes. Reserve the leftover marinade in the bowl.
- Arrange the tempeh on the tray and bake 22 to 25 minutes, flipping once and brushing with reserved marinade, until deeply golden and caramelized at the edges.
- Meanwhile, steam the broccoli 4 to 5 minutes until bright green and just tender, and warm the brown rice. Stir the lemon zest and remaining 1 tbsp lemon juice into any pan juices to make a quick drizzle.
- Divide the rice between two bowls, top with broccoli and baked tempeh, spoon over the lemon-garlic drizzle, and scatter with pumpkin seeds.
