Ingredients
- 2 skin-on salmon fillets (5 oz / 140 g each)
- 1 tbsp white/light miso paste
- 2 tsp mirin
- 1 tsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp grated fresh ginger
- 3/4 cup uncooked brown rice
- 8 oz (225 g) fresh spinach
- 2 cloves garlic, minced
- 1 tsp toasted sesame seeds
- 2 scallions, thinly sliced
- 1 tsp low-sodium soy sauce or tamari
Method
- Rinse brown rice and simmer in 1.5 cups water, covered, for about 35 minutes until tender; keep warm.
- Whisk miso, mirin, rice vinegar, and grated ginger into a smooth glaze.
- Pat salmon dry, set skin-side down on a lined sheet pan, and brush the tops generously with the miso glaze.
- Broil or roast at 425 F (220 C) for 10-12 minutes until the salmon flakes and the glaze caramelizes.
- Meanwhile, wilt the spinach in a dry hot pan for 1-2 minutes, then toss off heat with sesame oil, garlic, low-sodium soy sauce, and sesame seeds.
- Serve salmon over brown rice with the sesame spinach alongside, scattered with sliced scallions.
