Ginger-Cumin Lentil Stew with Sweet Potato and Spinach

Ingredients
- 3/4 cup (150 g) dried brown lentils, rinsed
- 1 medium (250 g) sweet potato, peeled and diced
- 1 medium (100 g) carrot, diced
- 3 packed cups (90 g) fresh spinach
- 1 small (100 g) yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon (15 g) fresh ginger, grated
- 2 teaspoons ground cumin
- 2 tablespoons (30 ml) olive oil
- 3 cups (720 ml) low-sodium vegetable broth
- 1/2 lemon, juiced
Method
- Warm the olive oil in a large pot over medium heat, then soften the onion for 4 to 5 minutes until translucent.
- Stir in the garlic, ginger, and cumin and cook for 1 minute until fragrant.
- Add the lentils, sweet potato, carrot, and vegetable broth, bring to a boil, then reduce to a gentle simmer.
- Cover and simmer for 25 to 30 minutes, stirring occasionally, until the lentils are fully tender and the sweet potato is soft.
- Fold in the spinach until wilted, stir through the lemon juice, and season to taste before serving.
