Golden Moong Dal with Cumin Rice and Wilted Spinach

Ingredients
- 3/4 cup split yellow moong dal (mung dal), rinsed
- 1/2 cup basmati rice
- 1 tbsp ghee or olive oil
- 1 tsp cumin seeds
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1/2 tsp ground turmeric
- 1/4 tsp ground coriander
- 3 cups low-sodium vegetable broth or water
- 3 packed cups baby spinach
- 1/2 tsp fine sea salt, or to taste
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh cilantro
Method
- Rinse the moong dal until the water runs clear, then combine with the turmeric, coriander and 3 cups broth or water in a pot. Bring to a boil, skim any foam, then simmer partially covered for 20 to 25 minutes until the lentils collapse into a loose porridge, stirring occasionally and adding a splash of water if it thickens too much.
- While the dal cooks, rinse the rice and simmer it in a small covered pot with 1 cup water and a pinch of salt for about 12 minutes, then let it stand off the heat, covered, for 5 minutes and fluff with a fork.
- In a small skillet, warm the ghee over medium heat, add the cumin seeds and let them sizzle for 20 seconds, then add the ginger and garlic and cook 1 minute until fragrant. Stir this tempering into the finished dal along with the salt.
- Fold the spinach into the hot dal off the heat so it wilts gently, then stir in the lemon juice. Divide the cumin rice between two shallow bowls, ladle the dal over and around it, and finish with the chopped cilantro.
