Ingredients

  • 1 can (about 4.4 oz) sardines packed in olive oil or water, drained
  • 1 cup cooked cannellini beans, drained and rinsed
  • 2 slices whole-grain rye bread
  • 2 cups arugula
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp red onion, finely diced
  • 2 tsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 small clove garlic, grated
  • 2 tbsp fresh dill or parsley, chopped
  • Freshly ground black pepper to taste

Method

  1. Toast the rye bread until crisp.
  2. In a bowl, mash the cannellini beans with the olive oil, lemon juice and grated garlic until spreadable but still chunky.
  3. Flake in the drained sardines, add the red onion and herbs, and fold together with plenty of black pepper.
  4. Spread the sardine and bean smash thickly over each slice of toast.
  5. Top with arugula and halved cherry tomatoes and serve open-faced.
