Garlicky Chickpea and Spinach Stew with Cumin and Lemon

Ingredients
- 1 can (400 g) chickpeas, drained and rinsed
- 150 g fresh spinach (about 5 packed cups)
- 1 can (400 g) crushed tomatoes
- 1 small yellow onion, finely diced
- 4 cloves garlic, thinly sliced
- 2 tablespoons (30 ml) extra-virgin olive oil
- 1.5 teaspoons ground cumin
- 1 lemon, half juiced and half in wedges
- 1/2 teaspoon fine sea salt
Method
- Warm the olive oil in a wide pan over medium heat and cook the onion until soft and translucent, about 5 minutes.
- Add the sliced garlic and cumin and stir for 1 minute until fragrant, keeping the heat gentle so the garlic does not brown.
- Pour in the crushed tomatoes and drained chickpeas, season with the salt, and simmer for 8 minutes until slightly thickened.
- Fold in the spinach a handful at a time and cook just until wilted, 2 to 3 minutes.
- Off the heat, stir in the lemon juice, taste and adjust salt, and serve hot with lemon wedges and a final drizzle of olive oil.
