Why it works

Salmon supplies about 2 g of the marine omega-3s EPA and DHA per serving, which are incorporated into cell membranes and generate resolvins that actively switch off inflammation, supporting both vascular and neuronal function into older age. Ingredients

  • 2 skin-on salmon fillets (5 oz / 140 g each)
  • 1.5 tbsp white (shiro) miso paste
  • 1 tbsp mirin
  • 1 tsp grated fresh ginger
  • 1/2 cup hulled or pearled barley
  • 1/2 cup shelled edamame (fresh or frozen)
  • 4 cups baby spinach or bok choy
  • 1 garlic clove, thinly sliced
  • 1 tbsp toasted sesame oil
  • 1 tsp low-sodium soy sauce or tamari
  • 1 tsp toasted sesame seeds
  • 1 scallion, thinly sliced

Method

  1. Simmer the barley in 1.5 cups water for 25 to 30 minutes until tender and chewy, adding the edamame for the final 5 minutes, then drain.
  2. Whisk the miso, mirin, and ginger into a thick glaze and spread it over the salmon fillets.
  3. Broil or bake the salmon at 425 F (220 C) for 9 to 11 minutes until the glaze bubbles and caramelizes and the fish flakes at the center.
  4. While the fish cooks, heat the sesame oil in a pan and briefly wilt the greens with the sliced garlic and tamari, 2 to 3 minutes.
  5. Spoon the barley and edamame into bowls and pile the sesame greens alongside.
  6. Set a miso-glazed fillet on each bowl and finish with toasted sesame seeds and sliced scallion.
