Roasted Salmon, Avocado and Citrus Grain Bowl
A warm-and-cool grain bowl: flaked roasted salmon over quinoa, ribbons of massaged kale, avocado, grapefruit and orange, red bell pepper, and a lemon-olive oil dressing. It's a deliberate stack of omega-3 fats, vitamin C, and monounsaturated fat that also happens to be a satisfying, portable midday plate.
Why it works

Ingredients
- 2 salmon fillets (about 140 g / 5 oz each), skin on
- 1/2 cup (90 g) dry quinoa
- 2 cups (60 g) curly kale, stemmed and thinly sliced
- 1 ripe avocado, sliced
- 1/2 red grapefruit, segmented
- 1 orange, segmented
- 1 small red bell pepper, thinly sliced
- 3 tablespoons extra-virgin olive oil, divided
- 1 lemon, juiced (about 2 tablespoons)
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Method
- Heat the oven to 400 F (200 C). Pat the salmon dry, rub with 1 tablespoon olive oil, and season with 1/4 teaspoon salt and the black pepper. Roast skin-side down on a lined tray for 12 to 15 minutes, until just opaque at the center.
- Meanwhile, rinse the quinoa and simmer in 1 cup water with a pinch of salt for about 15 minutes, until the water is absorbed; fluff and let cool slightly.
- Put the sliced kale in a bowl with 1 tablespoon olive oil and a pinch of salt, then massage with your hands for about a minute until it softens and darkens.
- Whisk the remaining 1 tablespoon olive oil with the lemon juice and remaining 1/4 teaspoon salt to make the dressing.
- Divide the quinoa and kale between two bowls. Flake the roasted salmon over the top and arrange the avocado, grapefruit, orange, and bell pepper alongside.
- Spoon the lemon dressing over each bowl and serve.
