Ingredients

  • 340 g chicken breast (two fillets)
  • 300 g cooked cannellini beans (about one 400 g can, drained)
  • 200 g fresh spinach
  • 160 g cherry tomatoes, halved
  • 24 g olive oil
  • 20 g parmesan, grated
  • 3 cloves garlic, sliced
  • 1 lemon (juice and zest)
  • Salt, black pepper and chili flakes to taste

Method

  1. Season the chicken with salt and pepper. Heat half the olive oil in a large skillet over medium-high and sear the fillets 4 to 5 minutes per side until golden and cooked through, then set aside to rest.
  2. Lower the heat, add the remaining oil, garlic and cherry tomatoes, and cook 2 to 3 minutes until the tomatoes blister.
  3. Add the cannellini beans with a splash of water and simmer 3 minutes, gently crushing a few beans to thicken the sauce.
  4. Stir in the spinach in handfuls until wilted, then add lemon juice, zest, parmesan and chili flakes.
  5. Slice the rested chicken, nestle it back into the skillet, spoon the beans and sauce over the top, and serve.
