Ingredients

  • 1/4 tsp flaky sea salt
  • 1/4 tsp finely grated orange zest (optional)

Method

  1. Line a small plate or tray with parchment paper and set it aside.
  2. Toast the chopped pistachios in a dry pan over medium heat for 2 to 3 minutes until fragrant, then let them cool.
  3. Gently melt the chopped chocolate in a heatproof bowl set over a pan of barely simmering water, or in short microwave bursts, stirring until smooth.
  4. Pour the chocolate onto the parchment and spread it into a thin, even slab, then scatter over the pistachios, pomegranate arils, flaky salt, and orange zest.
  5. Chill for about 20 minutes until firm, then break into rough squares and serve; store leftovers in an airtight container in the fridge.
