Why it works

Ingredients

  • 240 g (about 1 1/2 cups) frozen tart cherries, thawed, or fresh pitted tart cherries
  • 1 medium ripe banana (about 120 g), sliced
  • 30 g (about 1/4 cup) raw pumpkin seeds (pepitas)
  • 1/2 tsp ground cinnamon
  • 1 tsp pure maple syrup (optional)
  • 180 ml (3/4 cup) unsweetened hemp or pea milk

Method

  1. Toast the pumpkin seeds in a dry skillet over medium heat, stirring often, for 3 to 5 minutes until they puff and smell nutty, then set aside to cool.
  2. Divide the tart cherries and any released juices between two small bowls and pour the hemp or pea milk around them.
  3. Fan the banana slices over the cherries and drizzle with the maple syrup if using.
  4. Scatter the toasted pumpkin seeds on top and finish with an even dusting of ground cinnamon. Serve slightly chilled about an hour before bed.
