Ingredients

  • 3 tbsp raw pumpkin seeds (pepitas)
  • 2 tbsp shelled unsalted pistachios
  • 2 tbsp sesame seeds
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp extra-virgin olive oil, for finishing
  • 4 cups mixed raw vegetables for dipping (cucumber spears, endive leaves, radishes, bell-pepper strips)

Method

  1. Whisk the Greek yogurt, tahini, grated garlic, lemon juice and sea salt together until smooth and airy; loosen with 1-2 tbsp cold water if it is stiff, then spread onto a shallow plate and chill.
  2. Toast the pumpkin seeds, sesame seeds, coriander and cumin in a dry skillet over medium heat for 3-4 minutes, shaking often, until the sesame is golden and the seeds pop; let cool.
  3. Add the pistachios to the cooled seeds and pulse in a mortar or spice grinder to a coarse, sandy dukkah, keeping some crunchy pieces.
  4. Swirl the chilled dip, drizzle with the olive oil, and shower generously with the dukkah; serve the extra dukkah alongside with the raw vegetables for dipping.
