Dark Chocolate, Pepita and Tart-Cherry Bark
Thin shards of 80% dark chocolate studded with toasted pumpkin seeds, dried tart cherries, chopped walnuts and a whisper of flaky salt, snapped into rustic pieces.
Why it works

Ingredients
- 7 oz (200 g) 80% dark chocolate, chopped
- 1/3 cup raw pumpkin seeds (pepitas)
- 1/4 cup walnut halves, roughly chopped
- 1/4 cup unsweetened dried tart cherries, chopped
- 1/4 tsp flaky sea salt
Method
- Line a rimmed baking sheet with parchment paper. Toast the pumpkin seeds and walnuts in a dry skillet over medium heat for 4-5 minutes until fragrant and lightly golden, then set aside to cool.
- Melt about three-quarters of the chopped dark chocolate in a heatproof bowl set over barely simmering water, stirring until smooth; remove from heat, add the remaining chocolate and stir until fully melted and glossy (a quick seeding temper for a clean snap).
- Pour the chocolate onto the parchment and spread to an even 1/4-inch (6 mm) slab with an offset spatula.
- Scatter the toasted pepitas, walnuts and tart cherries evenly over the surface, press in gently, and finish with the flaky salt.
- Chill 25-30 minutes until fully set, then break into 8 rustic shards; store in an airtight container in a cool spot.
