Warm Banana Quinoa Porridge with Blueberries and Pumpkin Seeds
Creamy quinoa simmered until fluffy with sweet mashed banana and warm cinnamon, crowned with juicy blueberries, toasty pumpkin seeds, and a thread of maple.
Why it works
Whole-grain quinoa and ground flaxseed deliver complete plant protein plus soluble and insoluble fiber that slow gastric emptying and feed gut bacteria, supporting lasting fullness and regularity. Flax adds mucilaginous fiber and omega-3 ALA, while banana contributes resistant starch and prebiotic fructans that nourish the microbiome. Pumpkin seeds layer in magnesium and zinc alongside more protein to steady the meal.
Whole grains, legumes, and seeds are cornerstones of Mediterranean and DASH eating patterns, and large cohort studies consistently link higher whole-grain and fiber intake with better digestive health and satiety.
Ingredients
- 150 g (3/4 cup) white quinoa, rinsed well
- 500 ml (2 cups) water
- 1 large ripe banana, mashed (about 120 g)
- 1 tsp ground cinnamon
- 2 tbsp ground flaxseed
- 120 g (1 cup) fresh blueberries
- 20 g (2 tbsp) pumpkin seeds, toasted
- 2 tsp pure maple syrup
- 1 pinch fine sea salt
Method
- Combine the rinsed quinoa, water, and salt in a small saucepan; bring to a boil, then cover and simmer gently for 12 to 15 minutes until the grains are tender and the liquid is absorbed.
- Stir the mashed banana, cinnamon, and ground flaxseed into the hot quinoa and cook uncovered for 1 to 2 minutes until creamy and thickened.
- Meanwhile, toast the pumpkin seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until fragrant and lightly golden.
- Spoon the porridge into two bowls and top with blueberries and toasted pumpkin seeds.
- Finish each bowl with a thread of maple syrup and serve warm.
