Citrus and Berry Collagen Yogurt Bowl
A cold, bright breakfast bowl built on thick Greek yogurt, macerated berries, kiwi and orange, toasted pumpkin seeds, and a stirred-in scoop of collagen peptides. It reads like dessert but is quietly loaded with the raw materials skin cells draw on: vitamin C, protein, zinc, and live cultures.
Why it works
Vitamin C is a required cofactor for the enzymes that hydroxylate proline and lysine during collagen synthesis, so pairing a generous dose of it (kiwi, orange, berries) with abundant dietary protein gives the body both the scaffolding amino acids and the machinery to assemble them. Collagen peptides supply glycine, proline, and hydroxyproline, and small trials suggest oral peptides can modestly improve skin elasticity and hydration, though effect sizes are limited and industry-funded studies dominate the literature. The live cultures in yogurt support the gut microbiome, and there is early, still-preliminary interest in a gut-skin axis.
Vitamin C's role as a cofactor in collagen hydroxylation is well established biochemistry (classic scurvy evidence). Benefits of oral collagen peptides for skin elasticity and hydration come from short randomized trials that are mostly small and industry-sponsored, so treat that specific claim as suggestive rather than settled. Fits a whole-food, high-protein Mediterranean-style breakfast pattern.
Ingredients
- 3/4 cup (170 g) plain whole-milk Greek yogurt
- 1 scoop (11 g) unflavored collagen peptides
- 1/2 cup (75 g) mixed fresh berries (blueberries, raspberries)
- 1 kiwi, peeled and sliced
- 1/2 orange, segmented
- 1 tablespoon raw pumpkin seeds
- 1 teaspoon raw honey
- 1/4 teaspoon ground cinnamon
Method
- Toast the pumpkin seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until fragrant and just golden; set aside to cool.
- In a small bowl, toss the berries with the honey and let them sit for 5 minutes so they release a little juice.
- Spoon the Greek yogurt into a serving bowl and stir the collagen peptides through it until fully dissolved and smooth.
- Top the yogurt with the macerated berries, sliced kiwi, and orange segments.
- Scatter the toasted pumpkin seeds over the top and finish with a dusting of cinnamon. Serve immediately.
