Baked Salmon with Dill-Yogurt Barley and Peas

Why it works
Salmon delivers ~40g of complete, leucine-rich protein plus omega-3 EPA/DHA, which blunt exercise-induced inflammation and support the muscle-protein-synthesis signal after training. Ingredients
- 400 g salmon fillet, skin-on (two 200 g portions)
- 120 g pearl barley, dry
- 200 g frozen green peas
- 200 g Greek yogurt, 2%
- 1 small bunch fresh dill, chopped
- 1 lemon (zest and juice)
- 10 g olive oil
- 1 clove garlic, grated
- Salt and black pepper to taste
Method
- Rinse the barley and simmer in plenty of salted water for about 25 minutes until tender but chewy, adding the peas for the final 3 minutes, then drain.
- While the barley cooks, heat the oven to 200 C (400 F). Pat the salmon dry, rub with olive oil, salt, pepper and half the lemon zest, and roast skin-side down for 12 to 14 minutes until it flakes.
- Stir the Greek yogurt with the grated garlic, most of the dill, the lemon juice and remaining zest, and a pinch of salt to make the sauce.
- Fold about half the dill-yogurt through the warm barley and peas, then divide between two plates.
- Top each with a salmon portion, spoon over the remaining dill-yogurt, and finish with the reserved dill and cracked pepper.
