Ginger-Garlic Sesame Tofu with Broccoli over Brown Rice
Golden-crisped tofu cubes tumbled with charred broccoli and sweet red pepper in a glossy ginger-garlic sesame glaze, spooned over nutty brown rice with toasted sesame seeds and scallion on top. Fifteen minutes in the pan, and it still looks like you tried.
Why it works
Firm tofu delivers around 20 grams of complete, leucine-rich plant protein a serving, the kind your muscles need for repair and strength. Brown rice adds slow carbohydrate to refill glycogen. Broccoli and red pepper bring potassium, vitamin C, and sulforaphane precursors, and the sesame-and-tamari sauce keeps sodium moderate while soy isoflavones and soluble fiber support healthy LDL cholesterol and endothelial function.
Cardiovascular cohort and DASH-style evidence link soy protein, whole grains, and cruciferous vegetables to improved lipids and blood pressure, and legume- and soy-forward eating patterns keep showing up with better long-term heart health attached.
Ingredients
- 300 g firm tofu, pressed and cut into 2 cm cubes
- 180 g cooked brown rice (about 90 g dry)
- 250 g broccoli florets
- 1 red bell pepper, sliced into strips
- 2 tbsp gluten-free tamari
- 1 tbsp toasted sesame oil
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 tbsp sesame seeds, plus 2 scallions sliced, to finish
Method
- Toss the pressed tofu cubes with 1 tsp of the tamari, then pan-fry in half the sesame oil over medium-high heat for 6 to 8 minutes, turning, until golden and crisp on all sides; set aside. Give the cubes room in the pan. Crowd them and they steam instead of crisping.
- Add the remaining sesame oil to the pan and stir-fry the broccoli and red pepper for 4 to 5 minutes until crisp-tender and lightly charred, adding a splash of water to steam if needed.
- Stir in the ginger and garlic and cook 30 seconds until fragrant, then return the tofu with the remaining tamari and toss to coat in the glaze.
- Divide the warm brown rice between two bowls, top with the tofu and vegetables, and finish with toasted sesame seeds and sliced scallion.
