Blending keeps the fiber, and the blood sugar answer is good news
The common worry is that blending fruit turns it into sugar water. It does not. A randomized crossover in healthy adults compared the same fruit eaten whole and blended, and the blended version produced a lower glucose peak and lower area under the curve. Grinding seeded fruit appears to release fiber and polyphenols that chewing leaves behind. Blending is not juicing: the fiber is still in the glass, and so is everything attached to it.
It is the easiest way to eat things you would otherwise skip
Forty grams of raw kale, two tablespoons of ground flax, a whole beet, a serving of oily seeds: these are a chore on a plate and unnoticeable in a glass.
