Kiwi and Chia Pots with Hemp Hearts
Silky vanilla chia pudding set in little glasses, layered with bright emerald kiwi and a shower of soft hemp hearts, cool and gently sweet with a tender, pulpy bite.
Why it works
Chia seeds swell into a soluble-fiber gel that draws in water, softens stool and feeds resident gut bacteria, while fresh green kiwi supplies the protease actinidin plus its own fiber, both of which have modest trial evidence for easing constipation and speeding transit. Kiwi is also rich in vitamin C, a required cofactor for collagen synthesis in skin, and hemp hearts add plant protein and a balanced dose of omega-3 and omega-6 fatty acids that support the skin barrier. Together they make a light, hydrating, enzyme- and fiber-forward bite.
Consistent with Mediterranean-style eating and broader fiber-and-whole-plant guidance, where daily fruit, seeds and soluble fiber track with better regularity and gut microbial diversity; green kiwi in particular has small controlled trials supporting comfortable, regular bowel movements.
Ingredients
- 4 tbsp (48 g) chia seeds
- 1 cup (240 ml) unsweetened pea or hemp milk
- 1 tsp pure vanilla extract
- 2 tsp (10 ml) maple syrup
- 3 ripe green kiwis, peeled and diced
- 3 tbsp (30 g) hemp hearts (shelled hemp seeds)
- 1 tsp finely grated lime zest (optional)
Method
- In a bowl, whisk together the chia seeds, pea or hemp milk, vanilla and maple syrup, then whisk again after 5 minutes to break up any clumps.
- Cover and refrigerate for at least 2 hours, or overnight, until thick and pudding-like.
- Spoon a layer of chia gel into two small glasses or jars, add half the diced kiwi, then repeat with the remaining chia and kiwi.
- Shower each pot with hemp hearts and, if using, a little grated lime zest, and serve chilled.
