Ingredients

Method

  1. Toast the pumpkin seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until they puff and turn fragrant; set aside to cool.
  2. Melt the dark chocolate gently in a heatproof bowl set over barely simmering water (or in short 20-second microwave bursts), stirring until just smooth; avoid overheating.
  3. Pour the melted chocolate onto a parchment-lined tray and spread into a thin, even layer about 3 to 4 mm thick.
  4. Scatter the toasted pumpkin seeds, tart cherries and cacao nibs over the chocolate, pressing lightly so they adhere, then sprinkle with flaky sea salt.
  5. Chill until fully set, about 20 minutes, then break into 6 shards. Store in an airtight container in a cool place.
