Dark Chocolate Bark with Pistachios and Pomegranate
Snappy squares of deep 85% dark chocolate, scattered with toasted green pistachios and jewel-bright pomegranate arils, finished with a whisper of flaky salt. Bittersweet, crunchy, gently juicy.
Why it works

Ingredients
- 45 g (about 1.6 oz) 85% dark chocolate, dairy-free and soy-free, chopped
- 28 g (about 3 tbsp) shelled unsalted pistachios, roughly chopped
- 90 g (about 1/2 cup) fresh pomegranate arils
- 1/4 tsp flaky sea salt
- 1/4 tsp finely grated orange zest (optional)
Method
- Line a small plate or tray with parchment paper and set it aside.
- Toast the chopped pistachios in a dry pan over medium heat for 2 to 3 minutes until fragrant, then let them cool.
- Gently melt the chopped chocolate in a heatproof bowl set over a pan of barely simmering water, or in short microwave bursts, stirring until smooth.
- Pour the chocolate onto the parchment and spread it into a thin, even slab, then scatter over the pistachios, pomegranate arils, flaky salt, and orange zest.
- Chill for about 20 minutes until firm, then break into rough squares and serve; store leftovers in an airtight container in the fridge.
