Why it works

Ingredients

  • 200 g plain nonfat Icelandic skyr
  • 25 g vanilla whey protein isolate
  • 2 tbsp (20 g) raw pumpkin seeds, toasted
  • 1/4 cup (40 g) fresh blueberries
  • 2 tbsp (15 g) rye-and-oat granola
  • 2 tbsp cold water or unsweetened almond milk, to loosen

Method

  1. Toast the pumpkin seeds in a dry pan over medium heat for 2-3 minutes until they start to pop, then set aside to cool.
  2. In a bowl, whisk the skyr with the whey isolate and just enough cold water or almond milk to reach a thick, spoonable consistency.
  3. Spoon into a serving bowl and scatter the blueberries, toasted pumpkin seeds, and rye granola over the top.
  4. Eat immediately, ideally within an hour or two of resistance training.
