Cottage Cheese and Oat Protein Pancakes with Greek Yogurt

Why it works
Blending cottage cheese into the batter loads these pancakes with slow-digesting casein, plus the whey and egg protein already in the mix. Ingredients
- 150 g low-fat cottage cheese
- 50 g rolled oats
- 1 large egg
- 2 large egg whites
- 0.5 tsp baking powder
- 0.5 tsp vanilla extract
- 80 g plain nonfat Greek yogurt
- 80 g mixed berries (raspberries and strawberries)
- 1 tsp cooking oil or butter for the pan
Method
- Blend the cottage cheese, rolled oats, whole egg, egg whites, baking powder, and vanilla in a blender until smooth; let the batter rest 3-4 minutes to thicken.
- Heat a nonstick skillet over medium-low and lightly grease with the oil or butter.
- Pour in small pancakes and cook 2-3 minutes until bubbles form and the edges set, then flip and cook 1-2 minutes more until golden.
- Stack the pancakes and top with the Greek yogurt and mixed berries.
- Serve warm, and add a light drizzle of honey only if you want it.
