Golden Chickpea Scramble with Spinach and Tomato
Soft golden curds of turmeric-cumin chickpea batter folded with sweet sauteed onion, juicy tomato, and wilted spinach, finished with fresh herbs for a savory, protein-rich plant-based breakfast.
Why it works
Chickpea flour delivers plant protein and soluble fiber that help lower LDL cholesterol and slow glucose absorption, while its legume polyphenols and resistant starch feed a healthy gut. Extra-virgin olive oil contributes monounsaturated fat and polyphenols linked to better vascular function, turmeric adds anti-inflammatory curcumin, and spinach and tomato supply potassium, folate, nitrates, and lycopene that support blood pressure and heart health. Together these whole-food, legume-forward ingredients reflect eating patterns tied to healthy aging.
Mirrors the Mediterranean and DASH patterns and Blue Zones observations, where daily legumes, generous vegetables, and extra-virgin olive oil are consistently associated in large cohort studies with lower cardiovascular risk and greater longevity.
Ingredients
- 1 cup (92 g) chickpea flour (besan)
- 1 cup (240 ml) cold water
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp black salt (kala namak), plus more to taste
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 small yellow onion (about 100 g), finely diced
- 1 medium tomato (about 120 g), diced
- 2 packed cups (60 g) fresh spinach, roughly chopped
Method
- In a bowl, whisk the chickpea flour, water, turmeric, cumin, and black salt into a smooth, lump-free batter and set aside while you cook the vegetables.
- Heat the olive oil in a nonstick skillet over medium heat, add the onion, and saute 4 to 5 minutes until soft and golden.
- Stir in the tomato and cook 2 to 3 minutes until it breaks down, then add the spinach and cook just until wilted.
- Pour in the batter and let it set for about 30 seconds, then gently push and fold with a spatula so it cooks into soft golden curds, 4 to 6 minutes.
- Taste, adjust the black salt, and serve warm topped with fresh herbs or cracked pepper.
