Berry, Walnut & Flax Bircher with Kefir
A no-cook overnight bircher, rolled oats gone thick and creamy in kefir, folded through with ground flax, walnuts, mixed berries, and a whisper of cinnamon. Stir it once in the morning and you're done.
Why it works
Oats and ground flaxseed bring beta-glucan and mucilage, the soluble fibers that go after LDL cholesterol directly. Walnuts and flax back them up with ALA, the plant omega-3 tied to lower cardiovascular risk. Kefir throws in potassium and fermentation-derived peptides linked to modestly lower blood pressure. The berries close it out with anthocyanin polyphenols, keeping the lining of your blood vessels working the way it should. Not a milligram of added sodium anywhere in the jar.

Ingredients
- 40 g (1/2 cup) old-fashioned rolled oats
- 200 ml plain low-fat kefir
- 1 tbsp (10 g) ground flaxseed
- 14 g (about 2 tbsp) chopped walnuts
- 80 g mixed fresh or frozen berries (blueberries and raspberries)
- 1/4 tsp ground cinnamon
Method
- In a jar or bowl, stir together the oats, ground flaxseed, cinnamon, and kefir until evenly combined.
- Cover and refrigerate overnight, or at least 4 hours, so the oats and flax soften and thicken.
- In the morning, give it a stir and loosen with a splash of kefir or water if it's too thick.
- Top with the berries and chopped walnuts and serve cold.
