Golden Chickpea Scramble with Spinach and Tomato

Ingredients
- 1 cup (92 g) chickpea flour (besan)
- 1 cup (240 ml) cold water
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp black salt (kala namak), plus more to taste
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 small yellow onion (about 100 g), finely diced
- 1 medium tomato (about 120 g), diced
- 2 packed cups (60 g) fresh spinach, roughly chopped
Method
- In a bowl, whisk the chickpea flour, water, turmeric, cumin, and black salt into a smooth, lump-free batter and set aside while you cook the vegetables.
- Heat the olive oil in a nonstick skillet over medium heat, add the onion, and saute 4 to 5 minutes until soft and golden.
- Stir in the tomato and cook 2 to 3 minutes until it breaks down, then add the spinach and cook just until wilted.
- Pour in the batter and let it set for about 30 seconds, then gently push and fold with a spatula so it cooks into soft golden curds, 4 to 6 minutes.
- Taste, adjust the black salt, and serve warm, topped with fresh herbs or a crack of pepper.
