Sardine and Avocado Rye Toast with Lemon and Dill
A crisp slice of dark rye topped with mashed avocado, oil-packed sardines, lemon, and fresh dill for a briny, omega-3-rich open-faced snack.
Why it works
Oily sardines are one of the richest sources of EPA and DHA omega-3 fatty acids, which lower triglycerides and support healthy blood vessel function, and they contribute calcium and vitamin D from their soft edible bones. Avocado adds monounsaturated fat and potassium that help improve the LDL-to-HDL ratio, while whole-grain rye provides viscous beta-glucan and arabinoxylan fiber that blunts post-snack glucose and helps lower cholesterol. Dressing with lemon and dill instead of salt keeps sodium in check.
Draws on Mediterranean-diet and AHA evidence for oily-fish omega-3s reducing triglycerides, plus DASH emphasis on whole grains and potassium-rich unsaturated fats.
Ingredients
- 1 slice dense whole-grain rye bread
- half a 3.75 oz tin sardines packed in olive oil or water, drained
- 1/4 medium ripe avocado
- 1 tsp fresh lemon juice, plus a wedge to serve
- 1 tbsp chopped fresh dill
- Cracked black pepper to taste
- Pinch of chili flakes (optional)
Method
- Toast the rye bread until crisp.
- Mash the avocado with the lemon juice and a good grind of black pepper, then spread it over the toast.
- Lay the drained sardines on top and break them gently with a fork so they spread across the slice.
- Shower with fresh dill and optional chili flakes, add a squeeze of lemon from the wedge, and serve immediately.
