Ingredients

  • 1 ripe avocado
  • 2 toasted nori sheets, cut into quarters
  • 1/4 cup walnuts, finely chopped
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh dill or chives
  • Pinch of flaky salt and black pepper

Method

  1. In a bowl, mash the avocado with the lemon juice, olive oil, salt, and pepper until nearly smooth.
  2. Fold in the flaked salmon and chopped herbs, keeping some texture.
  3. Spoon a heaping tablespoon of the mixture onto each nori quarter.
  4. Sprinkle the chopped walnuts over the top and gently fold or roll each nori piece around the filling.
  5. Serve immediately so the nori stays crisp, or chill up to 2 hours.
