Dark Cocoa, Tahini and Pumpkin Seed Energy Bites
No-bake bites of dates, tahini, dark cocoa and pumpkin seeds rolled small for an afternoon lift. A magnesium- and iron-leaning snack for the craving-prone days of the cycle, made without added refined sugar.
Why it works
Dark cocoa, tahini and pumpkin seeds are collectively rich in magnesium and non-heme iron, two minerals often drawn on during menstruation, and the dates bind them together while adding fiber-buffered natural sweetness to steady the blood-sugar swings that can drive cravings. Tahini also contributes plant protein and healthy fat for satiety between meals. This is a satisfying whole-food alternative to a sugary snack, not a mineral supplement, so portion it as an occasional treat.
Built on the recognized nutrient density of cocoa, sesame (tahini) and pumpkin seeds as whole-food magnesium and non-heme iron sources, and on the general principle that fiber-and-fat-buffered snacks blunt post-snack glucose spikes.
Ingredients
- 1 cup pitted Medjool dates (about 10), soaked in warm water 10 minutes if firm
- 3 tbsp tahini
- 2 tbsp unsweetened dark cocoa powder
- 3 tbsp pumpkin seeds (pepitas)
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1/2 tsp vanilla extract
- pinch of fine sea salt
- 1 tbsp cocoa powder or sesame seeds, for rolling (optional)
Method
- If the dates are firm, soak them in warm water for 10 minutes, then drain well and pat dry.
- Add the dates, tahini, cocoa powder, vanilla and salt to a food processor and blend until a sticky paste forms, scraping down the sides once or twice.
- Add the rolled oats, chia seeds and pumpkin seeds and pulse briefly so they are incorporated but still leave a little texture.
- With slightly damp hands, roll the mixture into about 10 walnut-sized balls, pressing firmly so they hold together.
- Roll the bites in the extra cocoa powder or sesame seeds if you like, then chill for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to a week.
