Smoky Roasted Chickpea and Pepita Crunch

Ingredients
- 1 can (400 g) chickpeas, drained, rinsed and patted very dry (about 200 g drained)
- 20 g (2 tbsp) raw pumpkin seeds (pepitas)
- 1.5 tsp (7 ml) extra-virgin olive oil
- 1 tsp smoked paprika
- 3/4 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp fine sea salt
- pinch of cayenne pepper (optional)
Method
- Heat the oven to 220 C (425 F) and line a baking sheet with parchment. Spread the drained, thoroughly dried chickpeas on the sheet and roast for 20 minutes, shaking the pan once, until they begin to crisp.
- Meanwhile, stir together the smoked paprika, cumin, garlic powder, salt and cayenne in a small bowl.
- Pull the sheet out, scatter the pumpkin seeds over the chickpeas, drizzle with the olive oil and sprinkle over the spice blend, then toss well to coat.
- Return to the oven for 8 to 10 more minutes, until the chickpeas are deeply crisp and the pepitas are puffed and fragrant; watch closely so the seeds do not scorch.
- Cool for 5 minutes so the crunch sets, then serve warm or at room temperature in two small bowls.
