Chamomile-Steamed Kabocha and Tofu Chawanmushi
A silky Japanese-style savory custard steamed with chamomile-infused dashi, soft tofu, and sweet kabocha squash, gentle and warming for the evening.
Why it works

Ingredients
- 2 large eggs
- 1 cup (240 ml) warm dashi (kombu-based), or vegetarian kombu-shiitake stock
- 1 chamomile tea bag (or 2 teaspoons dried chamomile in an infuser)
- 3 oz (85 g) silken/soft tofu, cut into small cubes
- 1/3 cup (50 g) kabocha squash, peeled and cut into thin 1 cm pieces
- 1 teaspoon light soy sauce or usukuchi
- 1/4 teaspoon mirin
- 1 thin scallion, finely sliced, for garnish
Method
- Steep the chamomile in the hot dashi for 4 minutes, then remove the tea bag and let the dashi cool until just warm (hot dashi would scramble the eggs); stir in the soy sauce and mirin.
- Meanwhile, steam or microwave the kabocha pieces for about 4 minutes until barely tender, and divide them with the tofu cubes between two small heatproof cups or ramekins.
- Beat the eggs gently without frothing, then slowly whisk in the warm chamomile dashi and pass the mixture through a fine sieve for a silky custard.
- Pour the egg mixture into the cups over the tofu and kabocha, and cover each loosely with foil.
- Steam over low heat for 12-14 minutes until the custard is just set with a slight wobble in the center, then top with sliced scallion and serve warm as an evening snack.
