Ingredients

  • 1 cup old-fashioned rolled oats
  • 1.5 cups water
  • 1 cup plain unsweetened kefir
  • 1.5 cups pitted tart (Montmorency) cherries, fresh or frozen
  • 1 tbsp maple syrup
  • 1 tsp cornstarch mixed with 1 tbsp cold water
  • 1/4 cup sliced almonds, toasted
  • 1 tbsp honey
  • 1 chamomile tea bag (or 1 tsp dried chamomile flowers)
  • 1/2 tsp vanilla extract
  • Pinch of fine sea salt
  • Pinch of ground cinnamon

Method

  1. Warm the honey with 1 tbsp water and the chamomile in a small saucepan over low heat for 4 to 5 minutes, then remove the tea bag; set the chamomile honey aside. Keep the heat low. Chamomile turns bitter if it boils.
  2. In a saucepan, bring the water and a pinch of salt to a simmer, stir in the oats, and cook 5 to 7 minutes until creamy. Off the heat, stir in the vanilla and a pinch of cinnamon, then loosen with the kefir once the oats have cooled for a minute so it stays tangy and pourable.
  3. In a separate small pan, warm the tart cherries with the maple syrup over medium heat until they release their juices, about 4 minutes.
  4. Stir the cornstarch slurry into the cherries and cook 1 minute more until the compote thickens and turns glossy; remove from heat.
  5. Toast the sliced almonds in a dry skillet over medium heat 2 to 3 minutes until golden.
  6. Divide the kefir oats between two bowls, spoon the warm tart cherry compote over the top, scatter with toasted almonds, and finish with a drizzle of the chamomile honey.
