  • 1/2 cup (100 g) shelled edamame, fresh or frozen
  • 1 large egg
  • 1 tsp furikake (or 1 tsp toasted sesame seeds plus crumbled nori)
  • 1 tsp low-sodium soy sauce or tamari
  • 1 thinly sliced scallion

Method

  1. Lower the egg into boiling water and cook 7 minutes for a jammy yolk, then chill under cold running water and peel.
  2. Steam or boil the edamame for 3-4 minutes until tender, then drain.
  3. Spoon the cottage cheese into a bowl and fold in the warm edamame.
  4. Halve the egg and set it on top, drizzle with soy sauce, and finish with furikake and sliced scallion.
