Icelandic Skyr Power Bowl with Pumpkin Seeds and Rye Granola
Thick, tangy Icelandic skyr whipped with vanilla whey and topped with toasted pumpkin seeds, blueberries, and crunchy rye granola.
Why it works
Skyr and whey are casein- and whey-dominant dairy proteins exceptionally rich in leucine, the branched-chain amino acid that switches on mTOR-mediated muscle protein synthesis; this bowl clears roughly 5 g of leucine, above the ~2.5 g threshold that maximally stimulates the anabolic response. The rye granola and blueberries add glucose to replenish muscle glycogen after training, while pumpkin seeds supply magnesium and zinc that support muscle contraction and testosterone metabolism.

Ingredients
- 200 g plain nonfat Icelandic skyr
- 25 g vanilla whey protein isolate
- 2 tbsp (20 g) raw pumpkin seeds, toasted
- 1/4 cup (40 g) fresh blueberries
- 2 tbsp (15 g) rye-and-oat granola
- 2 tbsp cold water or unsweetened almond milk, to loosen
Method
- Toast the pumpkin seeds in a dry pan over medium heat for 2-3 minutes until they start to pop, then set aside to cool.
- In a bowl, whisk the skyr with the whey isolate and just enough cold water or almond milk to reach a thick, spoonable consistency.
- Spoon into a serving bowl and scatter the blueberries, toasted pumpkin seeds, and rye granola over the top.
- Eat immediately, ideally within an hour or two of resistance training.
