Ingredients

  • 6 Medjool dates (about 120 g), pitted
  • 30 g walnut halves (about 1/4 cup)
  • 1 tbsp unsweetened cocoa powder, plus extra for dusting
  • 1/2 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1 pinch fine sea salt
  • 1 to 2 tsp water, as needed

Method

  1. Toast the walnuts in a dry skillet over medium heat for 4 to 6 minutes, stirring, until fragrant; let cool.
  2. If the dates feel firm, soak them in warm water for 5 minutes, then drain well.
  3. Pulse walnuts in a food processor into a coarse meal, then add dates, cocoa, cinnamon, vanilla and salt and blend until a sticky dough forms, adding water a teaspoon at a time if needed.
  4. Roll the mixture into 8 small balls, dust lightly with extra cocoa, and chill 15 minutes to firm up before serving.
