Why it works

Ingredients

  • 140 g lean beef sirloin (top sirloin), trimmed and diced
  • 180 g sweet potato, peeled and cut into 1 cm cubes
  • 2 large eggs
  • 60 g fresh spinach
  • 0.5 small yellow onion, diced
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt and black pepper to taste

Method

  1. Toss the sweet potato cubes with half the olive oil, smoked paprika, salt and pepper, then roast or pan-fry over medium heat 10-12 minutes until tender and browned.
  2. Push the potato aside (or remove), add the remaining oil and the onion, and cook 2 minutes until softened.
  3. Raise the heat and add the diced sirloin; sear 2-3 minutes for medium, seasoning to taste, then fold in the spinach until just wilted.
  4. Make two wells in the hash, crack in the eggs, cover, and cook 3-4 minutes until the whites set but yolks stay runny.
  5. Season with black pepper and serve straight from the skillet.
