Golden Turmeric Tofu Scramble with Mushrooms and Spinach
Crumbled firm tofu turns golden with turmeric and picks up a savory, eggy note from kala namak, folded through browned mushrooms, wilted spinach, and a shower of cheesy nutritional yeast. No eggs anywhere near it, and you will not miss them.

Ingredients
- 300 g firm tofu, drained and patted dry
- 200 g cremini mushrooms, sliced
- 90 g (3 cups) fresh baby spinach
- 1/2 medium red onion (about 70 g), finely diced
- 2 cloves garlic, minced
- 3 tablespoons nutritional yeast
- 1 tablespoon olive oil
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon kala namak (black salt), plus more to taste
Method
- Warm the olive oil in a large nonstick skillet over medium heat, add the red onion, and cook 2 to 3 minutes until softened, then add the mushrooms and cook 5 to 6 minutes until browned and their liquid has evaporated.
- Stir in the garlic and cook 30 seconds until fragrant.
- Crumble the firm tofu into the pan in rough, bite-size pieces, sprinkle over the turmeric and kala namak, and stir gently for 4 to 5 minutes until the tofu is heated through and evenly golden.
- Fold in the baby spinach and cook 1 to 2 minutes just until wilted, then stir through the nutritional yeast.
- Taste, adjust with a little more kala namak and black pepper, and divide between two plates. It should taste eggy enough to make you look twice.
