Ingredients

  • 150 g shelled edamame (fresh or frozen), steamed
  • 1 tbsp tahini
  • 1 tsp toasted sesame oil
  • 1 tbsp fresh lemon juice
  • 1 small clove garlic, grated
  • 1 tbsp thinly sliced scallion, pinch of chili flakes and sea salt
  • 2 slices dark rye crispbread (about 20 g total)

Method

  1. Steam or boil the shelled edamame for about 4 to 5 minutes until tender, then drain and cool slightly.
  2. Add the edamame, tahini, toasted sesame oil, lemon juice, grated garlic, and a pinch of salt to a bowl and mash with a fork (or pulse briefly) to a coarse, spreadable smash, loosening with a splash of water if needed.
  3. Taste and adjust lemon and salt, then spread thickly onto the two rye crispbreads.
  4. Scatter with sliced scallion and chili flakes and serve immediately while the crispbread stays crunchy.
