Marinated Cannellini Bean & Kalamata Antipasto
A bright, garlicky bowl of creamy white beans tossed with kalamata olives, blistered cherry tomatoes, and cold-pressed olive oil. Scoop it, spoon it, don't overthink it.
Why it works
Cannellini beans deliver soluble fiber and plant sterols that bind bile acids and blunt LDL cholesterol, while their slow-digesting resistant starch feeds the short-chain-fatty-acid-producing gut bacteria tied to lower inflammatory markers. Extra-virgin olive oil and kalamata olives bring oleic acid plus polyphenols, hydroxytyrosol and oleuropein, that reduce LDL oxidation. The tomatoes add lycopene, a carotenoid tied to vascular health.

Ingredients
- 1 can (425 g) cannellini or white kidney beans, drained and rinsed
- 12 pitted kalamata olives, halved (about 40 g)
- 150 g cherry tomatoes, halved
- 40 g red onion, finely diced
- 2 tbsp extra-virgin olive oil
- 1 clove garlic, finely grated
- 2 tbsp chopped flat-leaf parsley
- 1 tbsp fresh lemon juice
- 1/2 tsp dried oregano, pinch of sea salt and black pepper
Method
- In a bowl, whisk the olive oil, lemon juice, grated garlic, oregano, salt, and pepper into a dressing.
- Add the drained cannellini beans, halved olives, cherry tomatoes, and diced red onion, then fold gently so the beans stay intact.
- Stir through the chopped parsley and let the mixture marinate at room temperature for at least 10 minutes so the beans absorb the dressing.
- Taste, adjust lemon and salt, and serve at room temperature on its own or with a few whole-grain crackers or cucumber spears.
