Edamame & Sesame Smash on Dark Rye

Ingredients
- 150 g shelled edamame (fresh or frozen), steamed
- 1 tbsp tahini
- 1 tsp toasted sesame oil
- 1 tbsp fresh lemon juice
- 1 small clove garlic, grated
- 1 tbsp thinly sliced scallion, pinch of chili flakes and sea salt
- 2 slices dark rye crispbread (about 20 g total)
Method
- Steam or boil the shelled edamame for about 4 to 5 minutes until tender, then drain and cool slightly.
- Add the edamame, tahini, toasted sesame oil, lemon juice, grated garlic, and a pinch of salt to a bowl and mash with a fork (or pulse briefly) to a coarse, spreadable smash, loosening with a splash of water if needed.
- Taste and adjust lemon and salt, then spread thickly onto the two rye crispbreads.
- Scatter with sliced scallion and chili flakes and serve immediately while the crispbread stays crunchy.
