Ingredients
- 1 cup (200 g) cooked green or brown lentils
- 3/4 cup (135 g) dry quinoa
- 1 medium sweet potato (about 300 g), diced
- 2 tablespoons tahini
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 cups (60 g) baby kale or spinach
- 1/2 teaspoon ground cumin
- 1/4 teaspoon fine sea salt
- 2 tablespoons water
Method
- Heat the oven to 220 C (425 F). Toss the diced sweet potato with 1 tablespoon of the olive oil, the cumin, and the salt, spread on a baking sheet, and roast 25 to 30 minutes until tender and browned at the edges.
- Rinse the quinoa, then simmer in 1.5 cups water, covered, for about 15 minutes until the water is absorbed; let it sit off the heat 5 minutes, then fluff.
- If using canned lentils, drain and rinse them; warm them gently in a small pan or fold them into the hot quinoa.
- Whisk the tahini with the lemon juice, remaining tablespoon of olive oil, and 2 tablespoons water until pourable, adding a little more water if needed.
- Divide the quinoa and lentils between two bowls, top with roasted sweet potato and a handful of baby kale.
