Charred Corn & Black Bean Quinoa Bowl
Fluffy cumin-scented quinoa piled with smoky charred corn, black beans, blistered cherry tomatoes, and cool avocado, brightened with lime and finished with toasted pepitas for crunch. Everything a bowl needs and nothing it doesn't.
Why it works
Quinoa and black beans together supply complete plant protein plus roughly 15 grams of fiber a bowl, much of it viscous soluble fiber that slows gastric emptying and steadies the post-meal glucose curve for fullness that lasts. Beans and quinoa are also rich in potassium, magnesium, and soluble fiber that support healthy blood pressure and LDL cholesterol. Avocado and pepitas add their own monounsaturated fat and plant sterols on top, favoring a heart-protective lipid profile.

Ingredients
- 90 g quinoa, rinsed
- 150 g cooked black beans (about 1/2 can), drained and rinsed
- 120 g corn kernels, fresh or thawed frozen
- 200 g cherry tomatoes, halved
- 1 small ripe avocado (about 120 g flesh), diced
- 20 g pepitas (pumpkin seeds)
- 2 tsp extra-virgin olive oil
- 1 tsp ground cumin
- 1 lime, juiced, plus wedges to serve
- 1/4 tsp salt, or to taste
Method
- Simmer the quinoa in 200 ml water, covered, for about 13 minutes until the water is absorbed and the grains uncurl; fluff and stir in the cumin, half the lime juice and a pinch of salt.
- Meanwhile, heat the olive oil in a dry skillet over high heat and char the corn for 3 to 4 minutes until spotted and smoky; add the black beans and warm through for 1 minute.
- Toast the pepitas in a separate dry pan for 2 minutes until they pop and turn golden, then set aside.
- Divide the quinoa between two bowls and top with the charred corn and beans, cherry tomatoes and avocado.
- Scatter with toasted pepitas, drizzle over the remaining lime juice, season to taste and serve with lime wedges.
