Tuscan White Bean and Tuna Power Salad
Flaked albacore and creamy cannellini beans folded through crisp fennel, celery, and lemon over a bed of arugula. No cooking, no excuses.
Why it works

Ingredients
- 2 cans (5 oz each) albacore tuna in water, drained
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 small fennel bulb, quartered and thinly shaved
- 2 celery stalks, thinly sliced
- 1/4 small red onion, thinly sliced
- 4 cups baby arugula
- 2 tbsp extra-virgin olive oil, juice of 1 lemon, 1 tsp Dijon mustard
- 2 tbsp chopped parsley, salt and cracked black pepper to taste
Method
- Whisk the olive oil, lemon juice, Dijon, a pinch of salt and plenty of black pepper into a dressing in a large bowl.
- Add the drained beans, tuna, shaved fennel, celery and red onion; fold gently so the tuna stays in flakes rather than mashing.
- Let it sit 5 minutes for the flavors to meld and the beans to absorb the dressing.
- Pile the arugula onto two plates, spoon the tuna-bean mixture over the top, and finish with chopped parsley and an extra crack of pepper.
