Lemon-Garlic Chicken Skillet with Cannellini Beans and Spinach

Ingredients
- 340 g chicken breast (two fillets)
- 300 g cooked cannellini beans (about one 400 g can, drained)
- 200 g fresh spinach
- 160 g cherry tomatoes, halved
- 24 g olive oil
- 20 g parmesan, grated
- 3 cloves garlic, sliced
- 1 lemon (juice and zest)
- Salt, black pepper and chili flakes to taste
Method
- Season the chicken with salt and pepper. Heat half the olive oil in a large skillet over medium-high and sear the fillets 4 to 5 minutes per side until golden and cooked through, then set aside to rest.
- Lower the heat, add the remaining oil, garlic and cherry tomatoes, and cook 2 to 3 minutes until the tomatoes blister.
- Add the cannellini beans with a splash of water and simmer 3 minutes, gently crushing a few beans to thicken the sauce.
- Stir in the spinach in handfuls until wilted, then add lemon juice, zest, parmesan and chili flakes.
- Slice the rested chicken, nestle it back into the skillet, spoon the beans and sauce over the top, and serve.
